    16th century Spaniards called them "fruits or apples of love" believing them to have love potion properties
    Early Chinese records indicate that the eggplant was being cultivated as early as the 5th century
    In Japan today it is one of the most important vegetables grown

    • Recipe for Eggplant Fingers

      Ingredients:

      Several Eggplant Fruits
      2/3 cup Seasoned bread crumbs
      1/2 teaspoon salt
      1/2 teaspoon celery salt
      Pinch of pepper
      1/3 cup grated parmesan cheese
      Two eggs
      Two tablespoons milk
      Olive oil

      Peel the eggplants and cut into finger sized strips
      Combine the bread crumbs, salt, pepper, celery salt, parmesan cheese
      Beat the eggs in separate dish and add the milk
      Dip the strips into the egg mix and then roll in the bread crumb mix
      Fry in olive oil on the stove about 350 degrees
      Drain or blot with a paper towel
      Serve with salsa or you own homemade ranch dip
      30 minutes from start to finish
