Rosy-lavender with white shading, the fruits of this beautiful Italian heirloom are large, round and 5-6" long. Mild flavor. Perfect for slicing, baking and oasting. Early maturing with an abundant crop make this plant worth the effort. Strong plants yield tasty, pear-shaped, fruits that are high in quality.

- Recipe for Eggplant Fingers
Ingredients:
Several Eggplant Fruits
2/3 cup Seasoned bread crumbs
1/2 teaspoon salt
1/2 teaspoon celery salt
Pinch of pepper
1/3 cup grated parmesan cheese
Two eggs
Two tablespoons milk
Olive oil
Peel the eggplants and cut into finger sized strips
Combine the bread crumbs, salt, pepper, celery salt, parmesan cheese
Beat the eggs in separate dish and add the milk
Dip the strips into the egg mix and then roll in the bread crumb mix
Fry in olive oil on the stove about 350 degrees
Drain or blot with a paper towel
Serve with salsa or you own homemade ranch dip
